Zen Blend Roasted Vegetables

Ingredients

  • 2 lbs mixed vegetables (e.g., bell peppers, zucchini, carrots)
  • 2 tbsp Zen Blend seasoning

Procedure

  1. Preheat oven to 400°F (200°C).
  2. Cut vegetables into bite-sized pieces.
  3. Toss vegetables with seasoning until evenly coated.
  4. Spread vegetables in a single layer on a baking sheet.
  5. Roast for 20-25 minutes, or until vegetables are tender and slightly caramelized.
  6. Serve hot as a side dish.
