Zen Blend Roasted Vegetables
Ingredients
- 2 lbs mixed vegetables (e.g., bell peppers, zucchini, carrots)
- 2 tbsp Zen Blend seasoning
Procedure
- Preheat oven to 400°F (200°C).
- Cut vegetables into bite-sized pieces.
- Toss vegetables with seasoning until evenly coated.
- Spread vegetables in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until vegetables are tender and slightly caramelized.
- Serve hot as a side dish.
