Lemon Butter Fish & Chips

Ingredients

  • 1 pound cod/halibut pieces
  • 2 cups flour
  • ½ cup corn starch
  • 3 tbsp Lemon Butter seasoning
  • ½ tbsp salt
  • ½ tbsp pepper
  • ¾ cup water
  • Oil for frying (cast iron, deep fryer, or pan fry)

Procedure

  1. Mix flour, corn starch, seasoning, salt and pepper in a bowl.
  2. Reserve ½ cup of seasoned flour mixture.
  3. Mix ½ cup of reserved seasoned flour with water to make a batter.
  4. Coat cod pieces in the batter, then dredge in the dry seasoned flour until fully coated.
  5. Heat oil in a cast iron skillet, deep fryer, or large pan over medium heat.
  6. Fry cod pieces in batches until golden brown and cooked through, about 5-7 minutes depending on size.
  7. Drain on slotted rack or on paper towels and serve hot.
