Lemon Butter Fish & Chips
Ingredients
- 1 pound cod/halibut pieces
- 2 cups flour
- ½ cup corn starch
- 3 tbsp Lemon Butter seasoning
- ½ tbsp salt
- ½ tbsp pepper
- ¾ cup water
- Oil for frying (cast iron, deep fryer, or pan fry)
Procedure
- Mix flour, corn starch, seasoning, salt and pepper in a bowl.
- Reserve ½ cup of seasoned flour mixture.
- Mix ½ cup of reserved seasoned flour with water to make a batter.
- Coat cod pieces in the batter, then dredge in the dry seasoned flour until fully coated.
- Heat oil in a cast iron skillet, deep fryer, or large pan over medium heat.
- Fry cod pieces in batches until golden brown and cooked through, about 5-7 minutes depending on size.
- Drain on slotted rack or on paper towels and serve hot.
